The origins of Japanese confectionery (wagashi) lie in the confectioneries brought to Japan from China and other countries.

Especially "Kyo-gashi" (confectionery made in Kyoto) was developed under the strong influence of Japanese traditional culture including literature, crafts and theater.

Japanese traditional arts such as the tea ceremony focus attention on the passing of the four seasons and traditional events. This delicate sensibility inspired confectionery craftsmen with new ideas and led them to create Japanese confectionery that is extraordinarily refined.

From this foundation of creativity inherited from the confectionery craftsmen of the past, Kogetsu is always striving to pioneer a new taste in wagashi.
